Wine Making
The winemaker is the iconic Phillip Shaw, ranked amongst the world’s top 100 winemakers. Philip uses parcels of select fruit from the Koomooloo Vineyard which he established 30 years ago, along with state-of-the-art winemaking equipment, the best new oak - and all the lessons learned making wine over the past 60 years to produce his lauded small batch range. The fruit was picked from Block 11 at Koomooloo which has a southerly aspect. The vines were leaf plucked and secondary shoots removed to allow free air drainage and allow dappled sunlight and at veraison bunch thinning aiming to achieve a crop of about 5 tonnes. The grapes were handpicked, chilled, and pressed the next day. Fermentation with native yeast. Barrels: 1-or 2-year-old French oak from a range of coopers-aged for 12 months in barrel.
The Vineyards
The vineyards are located at Koomooloo in the NSW Central Tablelands near Orange. Orange is different from other wine regions because of its elevation ranging from 600m, with the highest vineyards sitting at 1,100m on the slopes of the Great Dividing Range and Mt Canobolas, an extinct volcano. Orange is Australia’s highest vineyard area, providing a climate that’s typified by summers with warm days, cool nights, and cold winters. The mean January Temperature (MJT) is a relatively cool 21.9 degrees, making it a great place to grow grapes.
