Tasting Notes

 The colour is straw yellow with a beautiful shine and golden highlights. The nose is fine and elegant with flavours of yellow fruits, peach, apricot and exotic fruits. The palate is soft and harmonious with notes of candied fruits. Fresh and long in the mouth, this wine is very balanced, with great subtlety.

Wine Making

The winemaker is Pascal Cailleau. After studying viticulture and oenology, Pascal travelled to Burgundy and then to American vineyards, to broaden his perspectives and discover new winemaking techniques. Upon his return in 1984, he took over the family estate and implemented new prophylactic measures for growing vines. Passionate about winemaking, he combines new technologies and ancestral know-how while respecting the environment and enhancing the terroirs. His rigor and level of precision begin in the vineyards, but he works closely with each member of the team to constantly improve the quality of the wine.

The grapes are harvested by hand by successive sorting, the grapes are affected by 80% noble rot. They contain approximately 290 g of natural sugar per litre at harvest. Pneumatic pressing is very gentle and lasts 3 to 4 hours. Alcoholic fermentation takes place in vats at a natural temperature of 19 to 22°C. Aged in vats on fine lees to preserve the expression of the Chenin.

The Vineyard

 The Vieilles Vignes cuvée is an exceptional Coteaux du Layon Villages. The vineyard is in Saint Lambert du Lattay on the most beautiful schists of the estate whose micro-climate is favourable to noble rot. A quintessential wine from incredibly low yields, this sweet white wine hand-sorted in the fall will seduce you with its subtle balance.
