Deep red purple colour. A delightful lifted fragrance of violets, blueberry, raspberry and cassis, with a note of cinnamon, the palate rich and elegant intense and quite powerful, with abundant fine-grained tannins and lovely balance. It's loaded with charm and is already approachable. A superb wine.

 “A vibrant, still youthful wine. Purple colour with red edges. Violets, dried red roses, blackcurrants and cranberries – elevated, vivacious aromatics. Softly cored; dark soy and herb stalks, then beautifully softly fleshed. Tannins are fine-grained and poised. Ultra-classy.”*

Wine Making

 The winemaker is the iconic Phillip Shaw, ranked amongst the world’s top 100 winemakers. This wine was awarded the Gold Medal at the 2023 Global Cabernet Sauvignon Masters in London. 

“By far the best of the suite. Hand harvested, cold soaked for colour and open-fermented under the aegis of spontaneous yeast. The cap kept wet with agitation all but absent until dryness. Then plunged vigorously to extract tannin and aroma. A fine approach in the context of the warm year. The oak, lavish as is de rigueur. The result, excellent. Statuesque, yet light on its feet. Long, refined and exciting.”

The fruit is from a Block 2 at Koomooloo Vineyard- a selection of three different clones. The Fruit is handpicked and chilled overnight and then destemmed (1-2T open fermenters). It is held for about 3-4 days before spontaneous fermentation starts. Wine is pumped over an irrigator twice a day until fermentation is nearly complete, then plunged carefully for two weeks. Lightly pressed to barrel and then held for 20 months before going to bottle.

 

The Vineyards

 The vineyards are located at Koomooloo in the NSW Central Tablelands near Orange.  Orange is different from other wine regions because of its elevation ranging from 600m, with the highest vineyards sitting at 1,100m on the slopes of the Great Dividing Range and Mt Canobolas, an extinct volcano. Orange is Australia’s highest vineyard area, providing a climate that’s typified by summers with warm days, cool nights, and cold winters. The mean January Temperature (MJT)is a relatively cool 21.9 degrees, making it a great place to grow grapes.
