The vines grow on earth rich in iron oxide and clay. The vines are around fifty years old. Cultivated according to certified organic principles since 2009 and harvested by hand, the grapes are sorted, destemmed and lightly crushed before being vinified in stainless steel vats, inert containers which help preserve the identity of the berry. Aging in oak barrels lasts between 16 and 18 months, a choice specific to the estate, and the proportion of new wood is carefully controlled in order to let the fruit and the terroir express themselves freely.
